Red Curry Paste / Prik Geng Pet

Ingredients - makes enough paste for 4 persons:



13 Small red dried Chilies (soak in water for 20 minutes and discard the seeds)
4 Shallots - finely chopped
4 cloves Garlic - peeled and minced
100g Siamese ginger - finely chopped
200g Lemongrass - finely chopped
2 teaspoons Kaffir lime peel- finely chopped
100g Coriander root - finely chopped
20 White peppercorns
1 teaspoon Cumin seeds
1 tablespoon Coriander seeds

Method

  1. Roast coriander and cumin in a wok for about 5 minutes, grind to a powder in a mortar.
  2. Put all the remaining ingredients in a blender and blend well.
  3. Add the cumin and coriander and blend again.

The red curry paste is used to make red curry. It can be kept in a sealed glass jar in a refrigerator for up to 4 months
