Red Curry Paste / Prik Geng Pet

Preparation time: 20-25 minutes
Cooking time: 7-8 minutes
Ingredients - makes enough paste for 4 persons:
13 | Small red dried Chilies (soak in water for 20 minutes and discard the seeds) |
4 | Shallots - finely chopped |
4 cloves | Garlic - peeled and minced |
100g | Siamese ginger - finely chopped |
200g | Lemongrass - finely chopped |
2 teaspoons | Kaffir lime peel- finely chopped |
100g | Coriander root - finely chopped |
20 | White peppercorns |
1 teaspoon | Cumin seeds |
1 tablespoon | Coriander seeds |
Method
- Roast coriander and cumin in a wok for about 5 minutes, grind to a powder in a mortar.
- Put all the remaining ingredients in a blender and blend well.
- Add the cumin and coriander and blend again.
The red curry paste is used to make red curry. It can be kept in a sealed glass jar in a refrigerator for up to 4 months
