Chicken and Cashew Nuts / Guy Pat Met Ma Moo-Ang Him-Ma-Paan

1 ½ tablespoons | 6 tablespoons | Oil |
3 cloves | 12 cloves | Garlic - peeled & finely chopped |
20g | 80g | Onion - cut into 2 cm chunks |
70g | 280g | Chicken - cut into 2cm chunks |
30g | 120g | Mushrooms - straw or champignons, cut into quarters |
30g | 120 g | Bell peppers - sliced into 1 cm by 4 cm |
½ teaspoon | 2 teaspoons | White sugar |
1 tablespoon | 4 tablespoons | Oyster Sauce |
1 tablespoon | 4 tablespoons | Mushroom sauce |
30ml | 30ml | Water |
15 g | 60g | Cashew nuts - fried in oil until golden. Drain and put on absorbent paper. |
1 | 4 | Spring onions - cut into 2 cm lengths |
Method:
- Heat oil in wok on low heat for about 15 seconds.
- Add garlic, onion and chicken and fry until the chicken is done.
- Stir in mushrooms and bell peppers.
- Stir in sugar, oyster and mushroom sauce.
- Add water.
- Mix in cashew nuts and spring onions.
- Turn up heat, medium to high, and quick fry non-stop for half a minute.
- Turn off heat and put in a serving dish.
- Serve with steamed Rice.
Instead of chicken, add a combination of any of the following ingredients, up to 100 g per person:
- Firm tofu - cut into 1/2 cm by 2 cm pieces.
- Fresh pumpkin - peeled and cut into 1/2 cm by 3 cm pieces.
