Green Curry Paste / Prik Geng Key-Au-Waan

Preparation time: 20-25 minutes
Cooking time: 7-8 minutes



Ingredients - makes enough paste for 4 persons:



15 Small fresh green Chilies
4 Shallots - finely chopped
2 cloves Garlic - peeled and minced
50g Siamese ginger - finely chopped
100g Lemongrass - finely chopped
½ teaspoon Kaffir lime peel or lemon peel - finely chopped
50g Coriander root - finely chopped
1 teaspoon Cumin seeds
1 tablespoon Coriander seeds
1 teaspoon Salt

Method:

  1. Roast coriander and cumin in a wok for about 5 minutes, grind to a powder in a mortar.
  2. Put all the remaining ingredients in a blender and blend well.
  3. Add the cumin and coriander and blend again.

The green curry paste is used to make green curry. It can be kept in a sealed glass jar in a refrigerator for up to 4 months.
